Evaluation of industrial performance and organoleptic properties in Coffea arabica L. varieties in Guantánamo, Cuba

Abstract

The work was carried out in El Salvador Agroforestry Company, in areas belonging to the Orlando Pantoja Cooperative, during the 2016-2018 harvests, to evaluate the industrial performance and organoleptic properties of four coffee varieties, on plantations established with ten years.  Three farms, with a land area of ​​one hectare each, were divided into four plots according to the number of varieties. Twenty plants were marked for each farm corresponding to five for each variety and the ripe fruits were collected, selecting a 12.88 kg sample. The analyses were carried out according to the recommended methodology for the benefit of the coffee tree. Results showed that the coffee harvest, considering varietal purity, contributes to a higher quality of the final product compared to the mixtures of varieties. The Typica and Borbon varieties presented the best yields and organoleptic quality to classify for export in international markets.
