Abstract

Wastes generated during the whole post-harvest process of cocoa in Baracoa are untapped. The objective of this study is to evaluate the installation of a mini-industry that allows the processing of these wastes for the production of wine, vinegar, quince and other products, which would provide added value to the cocoa exudate, supplying more income to the families dedicated to the production of this item and the generation of employment in the area. The results obtained demonstrated the viability of the project evidenced in its recovery in four years and a favorable behavior in the rate of return on investment and an acceptable internal rate of return. Similarly, it also contributes to eliminate the pollutant load generated by the waste that is discharged into the environment.
