Abstract

The investigation is carried out at “Coronel Arturo Lince” Municipal Agroforestal Entity, El Salvador Municipality, Guantánamo province. There are used 30 mast ending animals with the objective of identifying which of the hybrids LCC-21 x Landrace, Duroc x Landrace and criollo has the highest level of yield, quality of their canals and commercial outages. For this purpose it is applied a totally random design with three treatments and ten repetitions, each of them developed with one individual. The yields of the hot, commercial and total meat canals have been meaningfully lower (p ? 0.05) on criollo race porks than on Duroc x Landrace and LCC-21 x Landrace, while concerning fat and skin they are obviously higher on the criollo race. However, only for the criollo race the 100 % of the inquired participants consider the color as the only normal indicator.
