Abstract

Guantánamo concentrates the biggest production cacaotera, of Cuba, for what to provide a cocoa with maximum quality, it is an opportunity offered to the cacaoteros to diversify his productions, in order consolidates and to assure the markets and the aromatic quality, which is influenced not only by the type of cocoa, but in addition by the benefit and by the climatic conditions. It for it that this work tried to increase the quality of the dry cocoa bean from the implementation of natural dries in zones with climatic ideal conditions for this process. For what there was realized a study of the quality of the grain dried in two zones by climatic different characteristics during the periods of rain and drought and these were compared between yes. One concluded that the quality of the grain increases when South is dried under the climatic present conditions in the Coastal Band.
