The research was developed at UBPC 3 “Álvaro Reynoso” of the Argeo Martínez Sugar Company, Guantánamo province, with the aim of evaluating the effect of the time elapsed between cutting and grinding on the industrial performance of sugar cane (Saccharum officinarum L.). The varieties used were C 90-469, C87-51, Ty70-17 and C86-12. The experiment was set up using a randomized block design with 16 treatments and 4 repetitions, taking 10 stems per treatment as a sample. The experiment showed that the different varieties showed effects on weight loss, the most affected was the C87-51 variety. With regard to industrial performance, it was stated that as the time between cutting and grinding increases, losses increase, with Ty 70-17 and C86-12 standing out. In the first 24 hours, purity increases and then decreases, in the case of% Brix-1 and pol-1 it increases with the time the cane is cut.
